Behind the scenes at Heidelberg’s fine-dining restaurant Weisser Bock, things are getting busy. The 2022 summer break is coming to an end, and with it the signs in Große Mantelgasse are pointing to a new start. Under the leadership of restaurant manager Daniel Winter and new chef Alexander Flachsbarth, a young team with high ambitions is forming: Forming the „Weisser-Bock-Academy“, they are now officially fighting the shortage of skilled workers in the catering industry.

The Weisser Bock Academy

Providing trainees with an innovative and successful start to their careers in the field of top-class gastronomy is the declared aim of our campaign. Managed by a young, high-caliber team, Weisser Bock, a company rich in tradition, is becoming an incubator for a new generation of professionals in the restaurant, hotel, kitchen, and event management business. The first six months of training are free from the stresses and strains of the industry and are used to get off to a successful start in the new working world with fixed daily working hours at regular pay. Not until all the key skills have been mastered will the trainees make the first move into the operational evening business.

Enterprises of the Merz Group

For 40 years, the restaurant and hotel Weisser Bock has been an integral part of the Merz family group of companies. Today, Michelle Wirth (née Merz) is the second generation to run the establishment. The group also includes the hotel and restaurant „Kulturbrauerei Heidelberg“, as well as the event location „Historisches Studentenlokal zum Seppl“, which is managed by Joshua Merz in second generation. The Merz Group’s hotels offer ideal conditions for training thanks to their broad orientation. Gastronomy and the hotel business can be experienced and learned here in all facets. After completing their training, apprentices will find the ideal career start according to their individual strengths and preferences.
